Welcome to the "Sound Off Section" for OTHER UNITS. They could be prefab pits, large trailer rigs, brick pits or other pits or grills. Here you get to be the judge and jury! Let other barbecue enthusiasts know how you judge and rate the unit you are using. Please be sure to give readers the make and model of the smoker. You might identify if it is home built or bought. Then give some general comments (keep it clean!) and your overall impression of the unit. If you had to make certain changes or modifications to make it perform to your standards, that might also be helpful. Also, be sure to let us know if you would buy another one. The only gripe is that it smokes at a little lower temp than I would prefer (185). It uses pellets much like pellet stoves except they are made from hardwood only. You can get hickory, mesquite, maple, and others. As a grill, youi get the real fire flavor that you get when camping and cooking steaks over a real wood fire. Two modifications I made to mine: first, I got some chimney flashing (comes in a small roll, about 12 inches wide) and cut a section just large enough to roll into a tube barely smaller than the same diameter of the smoke stack. To put a picture to it, you're basically extending the smoke stack INSIDE of the cooking chamber. The flashing is thin enough to staple w/a staple gun to keep the tube together. I inserted mine into the stack hole, and pulled it down so that it is touching the grill. This allows the hot air descend a bit closer to the food instead of quickly escaping through the stack opening. Next, I went to Lowe's and bought two thin pieces of rebar about 16 inches or so long. I put them in the firebox, and rest the charcoal/wood grill in the rebar. This effectively raises the grill to provide about 4 inches or so between the bottome of the firebox and the grill, so the ashes can fall but you still have plenty of room for good air circulation to keep your fire going. When I do ribs, it takes 3 loads of coal over about 5 or 6 hours, and the ash from those loads don't cut air flow any appreciable amount. With the stack damper wide open (always) and the firebox draft just barely cracked, the thermometer on the chamber lid usually reads anywhere from 250 to 270. From using another thermometer on the top grill (which is where I do all my cooking from), I know there's about 25 degrees difference between grill-level temperature and the lid thermometer. Planning on doing a 6-pound beef tenderloin for the 4th of July party, which I'll do with a little apple wood early, then finish with just a small bit of green juniper smoke. Try it sometimes. Good luck with your Brinkman. I know Smoky's not keen on them, but like I said, I'm a mere mortal and I've had good luck with mine after doing a little research and minor modification.
