Barbecue Sauce

Barbecue sauce, for most folks, is what makes a barbecue a barbecue! So, the sauce is one of the most important items on the menu. There are probably as many barbecue sauces as there are imaginations.

For a wonderful barbecue sauce which has a little sweet, a little heat ... and a lot of flavor, try the following:

    1 cup apple cider vinegar
    1 cup tomato sauce
    1/3 cup minced onion
    1/4 cup Worcestershire sauce
    3 Tbs. butter
    2 tsp sugar
    1 tsp salt
    1 clove of garlic
    1 tsp fresh ground black pepper
    1/8 tsp cayenne pepper (optional)
    1/tsp Tabasco pepper
       (or Louisiana Gold Pepper Sauce

Melt butter in a saucepan over medium heat. Add the onion and saute for 8 minutes. Add the garlic and saute for an additional 2 minutes. Stir in the remaining ingredients and reduce the heat to medium. Cook the sauce on low for an additional 30 minutes stirring frequently.

Use the sauce on the meat (when cooking with indirect heat) during the last 20 minutes - at the end of the cooking time when the temperature is lower than normal. You may also use the sauce on the table for the meal!
