Shrimp Quesadillas

Comments:

Now here is something fun! Shrimp and quesadillas on the grill. Call 'em an appetizer or a full meal, either way, they should be perfect.

First, collect the following ingredients:

2 pounds of large shrimp - cleaned
    1/2 cup spicy Italian dressing
    1/4 cup spicy barbecue sauce
    4 flour tortillas
2 cups chopped scallions (green onions)
1 cup grated Monterey jack cheese
    1 cup grated cheddar cheese
    2 cloves of garlic, grated
Fresh ground black pepper to taste
    salt to taste

Marinate the shrimp in the Italian dressing, garlic and barbecue sauce for 1 hour. Drain. Grill shrimp over medium heat until done while basting with any extra Italian dressing. Heat the oven to 300° while the shrimp is cooking. Chop shrimp into about 1/2" chunks. On a cookie sheet place 2 tortillas and add 1/2 of the shrimp, cheeses and scallions on each tortilla. Place the remaining tortilla on top of each one and bake until the cheeses melt. Cut into quarters and serve warm. Enjoy!
