For the veggie seekers among us, here is a great little recipe for Roasted Peppers which is both easy and delicious. Try them tonight.
First, collect the following ingredients:
4 fresh bell peppers - pref orange and red because of their colorful appeal
4 Tbs olive oil
2 Tbs red wine vinegar
1/2 teaspoon of oregano
salt - to taste
fresh ground black pepper - to taste
Heat your grill to 350°. Wash and dry the peppers. Next, grill the peppers over direct heat until they just begin to burn and collapse. Then remove and place in brown paper bag to let them continue cooking, loosening the skin and becoming soft. Once cool, remove the stem and seeds. Remove the peppers out of the bag and place them in a dish. Cut the peppers into strips and place in a bowl. Add oregano, olive oil and desired amount of salt and pepper. Mix and serve. Enjoy!
