Philippine Marinade

While there's really no reference to "actual Philippine barbecue", there are some great flavors that go well with this regional cooking that are adaptable for grilling chicken, fish etc over hot coals. Enjoy.

    1/2 C. PHILIPPINE soy sauce -
       do not substitute with Kikomann
    2-3 cloves garlic, minced or mashed
    1 Tbs. fresh grated ginger
    2-3 leaves of fresh lemon grass,
       chopped into 1/2" lengths
    1 orange, zest and juice
    2 lemons or lime, zest and juice

Cajun CatfishMarinate for up to 2 hours before cooking meat. Discard marinade. Grill until moist and tender, but not over cooked. Enjoy!
