Marvelous Meatloaf

Most folks would never consider the magnificent marvelous meatloaf out of the grill. Smoky would and has developed a great recipe to munch on.

 3 lbs. fresh ground chuck
1 Cup bread crumbs
2 eggs
1/2 Cup yogurt
1/2 Cup chopped onion
2 cloves garlic, minced
1/4 Cup bell pepper, chopped
1/4 Cup celery stalk and leaves, finely chopped
1/2 tsp thyme
1/2 tsp ground bay leave
1/4 tsp cayenne pepper
1/2 tsp fresh ground black pepper
2 tsp salt
 Mix all dry ingredients with meat, add beaten eggs and vegetables and press firmly into a meat loaf or bread pan. Roast at 350° until done (155°) - about 1 hr.
1 - 6 oz. tomato puree or paste
1 Cup water
1 Tbs onion powder or flakes
1 Tbs garlic powder
1 tsp thyme
1 tsp ground bay
1 Tbs Worcestershire sauce
Salt & pepper to taste
Simmer until thickened.
