Many Herb-Crusted Pork Tender

Comments:

There are few entrees more flavorful and easy to make than pork tenderloin. Season and cook. Easy as pie, but tastes twice as good!

First, collect the following ingredients:

    2 lbs pork tenderloin - silverskin removed
    3 Tbs extra virgin olive oil
    2 Tbs fresh rosemary - chopped
    2 Tbs fresh thyme - chopped
    2 Tbs fresh marjoram - chopped
    2 Tbs fresh sage - chopped
    1/2 tsp ground coriander
    1/4 tsp each salt and pepper
    3 cloves garlic - minced

Mix together the garlic, rosemary, thyme, marjoram, sage, coriander, salt and pepper in with the olive oil. Then take the tenderloins and gently cut 3/4 in cuts lengthwise along the meat. rub the mixture onto meat and into the slits you previously made. Place in a plastic bag and refrigerate overnight. Heat the grill to approximately 325°. and roast (heat on one side and the meat on the other side - not over direct heat) and cook until the internal temperature is approximately 155&DEG. If you want, serve with a nice zinfandel. Enjoy!
