Directions
To complete this delicious south sea marinade, combine the following ingredients:

    1/2 cup unsweetened pineapple juice
    1/2 cup light olive oil
    1/3 cup rum
    1 Tbs brown sugar
    1 Tbs grated fresh ginger
    2 cloves of fresh garlic grated
    1 tsp. Fresh cracked black pepper

Happy Hawaiian MarinadeIn a plastic or glass bowl combine all ingredients and mix thoroughly. Use 1/2 of mixture to marinate fish or shellfish (2 hours max) or chicken (6 hours max) before grilling/barbecuing. Discard used portion. Use the remaining unused marinade to occasionally baste the fish/shellfish/chicken until done.
