Grilled Pineapple Delight

This is sure to be a crowd pleaser.  Fresh pineapple grilled to perfection.  It makes a perfect dessert for that perfect meal and you guests will delight in the thought and flavor of this treat.

  4 slices fresh pineapple (you can used canned if fresh is not available.  Be sure to rinse well before marinating) Carve out the hard center.
  1 1/2 Tbs. honey
  2 Tbs. brandy (you may substitute spiced rum, vanilla or cherry juice if you don't have the brandy)
  1 tsp lemon juice
  cinnamon

Begin by preparing your marinated: Mix the honey, brandy and lemon juice glass dish or bowl. Add the pineapple slices, coating all sides well with marinade. Cover and marinate in refrigerator for 1to 2 hours.

While the pineapples are marinating, this gives you ample time to fire up the grill.  Preheat medium heat and lightly oil the cooking grates.

Remove pineapple and discard leftover marinade. Sprinkle lightly with the cinnamon and place pineapple directly on rack and grill for about 10 minutes, turning, until pineapple is hot and caramelized.
