Grilled Oysters Parmesan
Bet you've not tried these! Be sure not over-cook these guys. Properly done, they will be slightly brown in about 5 minutes cooking time on the grill.
1/2 cup olive oil
1 1/2 Tbs finely chopped garlic
24 oysters, shucked in the half shell, loosened
1 small bunch fresh parsley, chopped
1/2 cup (about 3 ounces) grated Parmesan cheese
Get your grilll to high heat.
Add the olive oil in a small saucepan and saute the garlic until it begins to sizzle, about 10 minutes over medium heat.
Next, place the oysters on the grill and add 1 teaspoon of the oil and garlic seasoning to the top of each oyster. Next add a pinch of parsley. Now close you grill and cook about 4 minutes. Then open and top oysters with 1 teaspoon Parmesan cheese and again close grill for 1 minute, or just long enough to slightly melt the cheese. Finally it is time: transfer oysters to a plate with tongs and serve.
