The misunderstood vegetable. Did you know that the eggplant is most commonly purple in color but may also be white or green?
Selection: Be sure to select ones that have a glossy shine and are generally six to eight inches long. If it has a dull or brown color, it means the fruit is over mature, and will more than likely be tough and bitter.

Directions: For a delicious quickie, slice fresh, firm egg plants crosswise about 3/4-1" thick. Sprinkle them lightly with:
 1 t. each garlic and onion powder
1/2 t. ground oregano
Lightly salt to taste
Rub gently with a decent olive oil and broil until the instant that the flesh becomes tender.
