The catfish is a lean fish full of protein. Thanks to the catfish farms, they are not only available year round but moderately priced. You don't have to fry 'em to enjoy 'em! Here is a great way to spice up the grill with some flavorful catfish.
Combine the following ingredients:
4 to 6 fillets - about 6 oz each
1/4 cup soy sauce
5 cloves of garlic - minced
4 Tbs white wine
3 Tbs olive oil - light
3 Tbs sugar - white
1 Tbs fresh ground black pepper
1 Tbs parsley - fresh
1 tsp salt
2 tsp lemon juice
1/8th tsp cayenne pepper
Rinse and dry the catfish. Mix the above ingredients and pour over the fish. Marinate for 1 to 2 hours. Grill over direct heat until done turning once. If you have a fish basket, we suggest using it. You might also have a grill topper which would help hold the fish together while cooking and turning.
