Fiery Jalapeno Grilled Chicken

Talk about tons of great flavors, this recipe will certainly wake your taste buds and have you screaming for more and more.  This is a great summer recipe for family and friends alike.

6 chicken breast halves without skin
1/2 cup lime juice, freshly squeezed
1/4 cup honey
2 Tbs fresh cilantro
3 jalapeno peppers, unseeded and sliced
2 Tbs soy sauce
3 cloves garlic, chopped
1/4 tsp ground cinnamon
1/4 tsp salt
1/4 tsp ground black pepper

Place chicken in a zip lock bag and set aside for further ingredients. Next, combine the remaining ingredients in an electric blender and blend until smooth for the marinade. Reserve 1/4 cup of your marinade and pour the remaining marinade into the zip lock bag with the chicken. Zip the bag closed and thoroughly coat the chicken.  Place chicken in the refrigerator for 2 to 8 hours.

When ready, prepare your fire for indirect cooking (heat on one side and the meat will be placed on the other side) Drain chicken, and place on the grill and cook with grill lid closed, until done. Turn chicken occasionally and brush with reserved marinade.  Always use a meat thermometer to determine doneness.  It should register 160° in the center.
