Protect yourself and the fire from the wind and cold. It can be brutal. |
If bitterly cold, cook items that can be cooked quickly or do not need constant attention. |
Use a wireless remote thermometer to register the meat & pit temps.

Keep the lid closed to prevent heat from escaping. Cold weather and wind are also your enemies. Start early. |
Have sufficient lighting when grilling in the dark. It is just so much easier. |
Don't cook in the garage or other structure that does not have adequate ventilation. It can kill you! |

Drunken Game Day WingsProbably the all-time favorite finger-food on game day ... or just about any other occasion where 'diet' is not an issue... are grilled chicken wings. You will find this recipe to be one of the better ones. Be sure to fix plenty! |
Let's begin by collecting the following ingredients:

20 chicken wings
1/3 cup bourbon
1/3 cup honey
1/4 cup light soy sauce
3 Tbs oyster sauce
10 cloves garlic, minced
2 tsp ginger, minced
2 tsp white pepper
2 tsp Tabasco sauce
Start by cutting chicken wings into three pieces. Throw away the wing-tip and keep the second-joint and drumette
Combine the remaining ingredients in a non-reactive bowl and then add the wing pieces and mix well.
Next, wrap the bowl with plastic wrap and pop it into the fridge overnight. [If you are really in a hurry, go ahead and plop them on a hot grill.] The next day, place chicken on the grill and brush with remaining juices in the bowl.
Grill/Roast the wings at 400° F for 20 minutes turning over once or until generously browned.
