Key Notes:

Gas Grills, unlike Wood Grills, have a tendency to grow in heat rather than diminish. A wood fire will flare up occasionally, but is always on the decline unless additional wood is added. The Gas Grill, on the other hand, has a constant source of fuel and when the grease catches fire, then things can get out of control quickly. If this occurs, open the hood carefully and add water to the flare-ups. Then close the hood and keep the fire under control. Don't loose the meat to the fire.

If you are having difficulty in controlling the temperature with it being too hot, take a stick or some other item and prop the hood open about 1/2". They even make a hood holder for this purpose. This method will allow some of the heat out on a constant basis. Adjust the opening size to achieve the desired consistent temperature.

For those desiring a little 'extra' browning, the Gas Grill is excellent. Simply turn up the flame and allow the flare-up/increased temperatures to sear the meat. A good use of this technique would be at the beginning of cooking a brisket. Simply sear the outside of the meat to seal in the juices. Then reduce the heat to normal cooking temperatures for the duration of the cooking time.
