FAQ Subject: Fish: Skin side up or down?

Dear Smoky

my name is tony . i'm just learning how to smoke salmon. all help will be appreciated. how do you place fish on grill .skin side up or down .i put skin side on grill and it stuck .thank you for your help.

Hi Tony,

Putting salmon on a hot grill skin side down assures that the skin will stick to the grill. This is fine. Just take the flesh up and leave the skin on the grill. You don't plan to eat it anyhow.

If you use skinless fillets, have the gill really hot and wait until they release to turn them.
