FAQ Subject: Cuban coffin cooking method?

Have you ever heard of the Cuban Coffin cooking method. A wood box, lined with foil or some kind of metal put below ground (with or without hot rocks) with coals on top - Similar to a Dutch Oven???? Let me know the specifics of making the "cuban coffin" if available.

Hi Kathy,

In Cuba it is call a Chinese Coffin.

It is the same as cooking in a Dutch oven. The box must have a metal top upon which hot coal are piled. Actually an old cast iron bath tub make an excellent one. Rectangular aluminum make fine smaller cookers.

But the effect is the same as cooking in an oven or in a grill with a cover.
