Smoky,

Some one told me that willow is the best to smoke fish and poultry, can you confirm this for me.

I live in northern Alberta in Canada and I have an abundance of willow on my property.

Hi K. Chubey,

"Smoking" is such a confusing word. Do you want to smoke something to preserve it or do you want to cook it?

Willow is very good for smoking - as in curing. It makes an excellent charcoal.

Willow is also good for cooking. It doesn't impart very much taste, but that's okay. Great for fish, fowl or flesh.
