Topic: Good ways to spice a turkey
From: Gary Anthony
Subject: Seasoning a new grill

Smoky,

I'm searching for spice recipes for use with the spice injectors like the ones you mentioned in your newsletter. I am going to be smoking a turkey this weekend, and will use butter, poultry seasoning and cider for this one. I was hoping to find some other ideas here on your web page. Thanks in advance. Thanks,
Gary Anthony

Hi Gary,

I'd go light on the poultry seasoning. Smoke and cider ought to be the dominant flavors.

If you want to inject, try 1/2 c. water, 1/4 c. corn (or similar)oil, 2 T. Worchestershire sauce, 1 t. Garlic Powder, 1 t. onion powder and 1/2 t. thyme. Bring everything to a boil then allow it to cool before injecting.

Fun,

Smoky
