Thanks for such a good page and resource on BBQ! I have been hooked since this summer when you gave me some great advice on buying a Weber Smokey Mountain Cooker instead of a Big Green Egg (Truly a better BBQ cooker). Anyway my question this time is based on sausage making. I purchased the book you reference alot (Secrets) and they talk about several different types of meat grinders including a Hamilton Beach product that I am having one heck of a time finding where I can buy something to use. Any Ideas? THX ALOT!!

Re: sausage stuffers. I use a KitchenAid. Still have an old Oster. Both worked very well. Both are still available. Bought my KitchenAid at Sam's.

Any decent meat market ought to have sausage casings. If they do not have them in stock, they can quickly order them in. Specify what size and type that you want.

If you are serious about making sausage, you need the book by Richard Kutas, 1067 Grant Street, Buffalo, NY 14207. He also has a complete range of spices, cures, casings and equipment. Casings can also be had from Rothamer Meats, Rt. 1, Cottage Grove, WI 43427. Morton salt makes a range of seasoning mixtures.
