Topic: What's a barbecued potato, anyway?
From: Louise
Subject: Sonoran Potatoes
Smoky,
Several years ago, Bon Appetit had a special ''dryrub'' recipe to put on
potatoes before Barbequing them. I have gone through the database and am
unable to locate this recipe. Can you please find this recipe and Email it back to me or
tell me how I can obtain it? Thanks!
Louise
Hi Louise,
That sounds like a Bon Appetit thing.
They may have called themselves "barbecuing" potatoes, but even the US
Department of Agriculture limits the term "barbecuing" to meat and poultry.
I have no idea of their recipe, but the name "sonoran" suggests a
Southwestern flavor. Let's whip one up.
Smoky's Sonoran Potato Seasoning
Chili powder - your favorite brand 1 t.
garlic powder 1 t.
onion powder 1 t.
cumin powder 1 t.
paprika 1 t.
ground thyme 1/4 t.
ground oregano 1/4 t.
Salt 1 T.
Mix ingredients well and put into a shaker topped container. Scrub
potatoes, dry, rub with oil and sprinkle heavily with seasoning. Place on
grill and cook at 350-400* F. until soft.
Please tell me how it comes out.
Fun,
Smoky
